In case you missed it, on the 5th February 2020, the SABS Technical Committee, SABS TC 034/SC17 approved the publication of SANS 10330:2020 Edition 3 on Food safety management ― Requirements for a food safety system based on prerequisite programmes and Hazard Analysis and Critical Control Point (HACCP) principles.
This standard specifies the requirements for the development, establishment, implementation, maintenance, and continual improvement of (HACCP) as a preventative means to enhance the safety of food in all food handling organizations, directly or indirectly involved in the food chain.
The standard focuses on the implementation of continuous improvement programmes in food-handling organisations in general was published with most of the requirements of edition 2.1 being continued in edition 3.
However, there are some revised requirements which included:
- The obvious new document title: Food safety management ― Requirements for a food safety system based on prerequisite programmes and Hazard Analysis and Critical Control Point (HACCP) principles
- Restructure of the standard (where previously there were 8 clauses, now there are 10 clauses)
- Clause 4 now include the document requirements as previously indicated in Clause 8.13- Stage 12 on the previous edition
- The inclusion of communication and training as subclause under Clause 5 and Clause 6 with subclause 6.3, on the training of staff involved in the development and maintenance of a food safety system
- The separation of the 12 stages as previously noted in Clause 8, to clause 9- Preliminary steps and Clause 10- Application of the HACCP principles
- The new clause 8- Food Safety Measure, which was previously included in clause 8.12- Stage 11, describing general practices for food safety measurement and internal audits
- Clause 5.2 detailing requirements for a food safety policy.
- Annex A as a table cross-referencing CODEX HACCP and the draft to make following the standard easier.
Following the publication of SANS 10330:2020 in February 2020, the SANAS Specialist Technical Committee (STC) on Food Safety Management Systems (FSMS) resolved that the transition period to SANS 10330:2020 be 2 years from the last day of the month of publication of the revised standard. Accordingly, the transition due date from SANS 10330:2007 to SANS 10330:2020 will be the end of February 2022. As a result, all the accredited certificates issued SANS 10330:2007 will not be valid from the 1st of March 2022.
