- Understand FSSC 22000 Ver 5.1 Requirements and the most important changes in this version, including auditing organisations against:
- FSSC 22000 Scheme Requirements
- ISO 22000:2018 (Clauses 4 –10)
- Prerequisite Programme Requirements (PRPs) -(Sector Specific)
- Hazard Control
- Grasp the application of risk-based thinking, leadership and the process approach.
- Understand and apply Auditor skills and knowledge based on ISO 19011:2018 -Guidelines for auditing management systems:
- Types of audits
- Audit criteria
- Principles of auditing
- Characteristics of an auditor
- Plan and prepare for the auditing process, including an audit plan/ schedule.
- Execute an internal audit through the gathering of objective evidence through observation, interviewing and sampling.
- Opening and closing meetings
- Grading of audit findings (conformity; minor, major and critical nonconformities).
- Value-added report writing
- Develop and implement key documentation to ensure the auditing process is concluded in a professional manner
- Work through examples of auditing requirements and case studies.
- Apply grading and closing nonconformities.
