Basic Food Safety Online Course | Progress Excellence


Staff on the shop floor has a major impact on the production of safe food. A food safety culture is a fundamental factor in the management of product safety. The BRC issue 8 will see a requirement for the development of a documented strategic plan on continuously improving the food safety culture within an organization. This online course has been designed to change behaviours of shop floor staff in all the departments of the organisation in such a way that they act responsibly at any time during the operation, day and night, with regards to good manufacturing practice.


The Progress Excellence Approach

  • This training can be done by the individual in one session, or shorter sessions to ensure concentration of the delegate and availability of staff in work environments.
  • Use of photographs to ensure clear understanding.
  • This course is available in English, Xhosa and Zulu.
  • Games and competitions to stimulate learning.
  • There are quizzes to test understanding.
  • It covers the training requirements of GFSI Standards (FSSC22000, BRC Food and IFS).
  • It is designed to change behaviours and create a food safety culture.
  • Progress of delegates can be tracked by the Administrator.

Entry requirements

There is no entry requirement for this training.



  • An assessment is performed after completion of each module.
  • A pass mark of 70% is required in total for all the modules for the certificate to be issued.
  • You have two attempts to pass the theoretical component of this course. After a second unsuccessful attempt, you will be required to re-register, pay and repeat the course. By enrolling for this course you automatically accept this term and condition.


Duration of the course

2 to 3 hours in total



The course material will equip delegates with knowledge of basic issues required by various food safety management standards, such as BRC, IFS, SANS10330 and FSSC22000 and an understanding thereof will change behaviours. The online training covers the following topics:

  • Systems and Standards
  • Basic food microbiology
  • Allergens
  • Cleaning & sanitation
  • Personnel hygiene
  • Pest prevention and controls
  • Food defence
  • Foreign matter control
  • Food safety hazards and their control and HACCP
  • The role of procedures, record keeping and traceability in food safety management systems
